Agave’s New Owners Bring Family Flavor to a Lafayette Favorite |
Michael and Elizabeth Carvajal are refreshing the menu, margaritas and downtown gathering space. |

Lafayette’s Agave Mexican Grill & Cantina is getting a fresh chapter, with a family’s restaurant roots helping shape what comes next.
Michael and Elizabeth Carvajal took ownership of the four-location business in May, according to The Advocate’s profile of the new owners.
Their plans blend more traditional Tex-Mex flavors with Caribbean and South American influences, drawing on Michael’s family experience in the restaurant business.
Among the additions described in the report: a Cuban sandwich, elote, his mother’s flan recipe and his grandmother’s hot sauce.
Margaritas are getting attention, too, with recipe changes emphasizing natural lemon and lime extracts and agave nectar.
Downtown, the couple is creating a more relaxed gathering spot, with lounge seating, expanded coffee options and a stronger connection to the sidewalk outside.
A monthly Latin Night and plans for Friday and Saturday live music add another reason to reconnect with the familiar local name.
For regulars, it’s a reason to watch a familiar favorite evolve; for newcomers, it’s an invitation to explore the neighborhood dining scene.
The changes are gradual, with food quality and consistency taking priority.

Grandmother's hot sauce and mom's flan recipe is a nice touch but I'll believe the margarita upgrade when I taste it. Too many places claim fresh ingredients and then you can tell it's still a mix.
A Cuban sandwich at Agave is not something I expected but honestly I'm here for it. Hope they keep the original queso though, that thing is a Lafayette staple.
